Curious About Cauliflower Rice?

Ok, I admit, I was VERY skeptical about cauliflower rice.

As a vegetarian who has a child with celiac disease, rice is a huge staple in our diets. But I recently learned about cauliflower rice and it sounded so easy, I had to try it.

All you do is use a cheese grater to grate a head of raw cauliflower. That's it! It is the exact size and consistency of cooked rice. Fluffy, light and oddly filling when served with stir fry.

Cauliflower Rice Stir Fry

Sauté whatever veggies and herbs you have on hand in one tablespoon of coconut oil and two teaspoons of Braggs Amino Acids (you can also use soy sauce or tamari).

The veggies I used:

  • broccoli
  • red peppers
  • onion
  • ginger

Right before you remove the skillet from the heat, add the cauliflower just to warm it up. Top with peanuts, hot sauce, a little more Braggs (basically, season to your personal taste).

I was surprised how I barely noticed the difference between that dish and my regular stir fries with rice.

It’s a great, healthy gluten-free option and too easy not to give it a try.
