Creamy Coconut Curry Meatballs

Ingredients

Meatballs

  • 2 lbs ground sirloin (substitute ground chicken or turkey for a leaner option)
  • 1 red onion, diced
  • 1/2 cup plain Greek yogurt
  • 1/4 cup almond flour
  • 1 egg
  • 1/2 jalapeño, diced
  • 2 tbsp cilantro, diced
  • 2 cloves garlic, minced
  • 2 tsp curry powder
  • 1 tsp sea salt

Coconut Curry Sauce

  • 1 tbsp avocado oil
  • 1/2 jalapeño, diced
  • 2 cloves garlic, minced
  • 2” ginger, grated
  • 2 tbsp curry powder
  • 1 red bell pepper, diced
  • 1 small yellow onion, diced
  • 1 (14 oz) can diced tomatoes
  • 1 (14 oz) can unsweetened coconut milk

Garnish (Optional)

  • 2-3 tbsp plain Greek yogurt
  • Fresh cilantro, chopped

Directions

1. Sauté Vegetables: Heat a large pan with a lid over medium heat. Add avocado oil. Once hot, add jalapeño, garlic, ginger, and curry powder, sautéing for about a minute. Then mix in the onion, bell pepper, diced tomatoes, and coconut milk.

    2. Simmer the Sauce: Bring the sauce to a boil, reduce the heat, and let it simmer for 15 minutes.

    3. Make the Meatballs: In a large bowl, combine all meatball ingredients. Use your hands to mix until well combined. Form the mixture into meatballs (about 2 tablespoons each) and set aside.

    4. Blend Sauce: Use an immersion blender to blend the sauce directly in the pan until smooth. Alternatively, carefully transfer the sauce to a blender and blend until smooth, then return it to the pan.

    5. Cook Meatballs: Add the meatballs to the sauce, cover, and cook for about 20 minutes, or until the meatballs are cooked through.

    6. Garnish: In a small bowl, mix a few tablespoons of the cooking sauce with 2-3 tablespoons of plain Greek yogurt. Whisk until smooth and drizzle over the meatballs. Garnish with fresh cilantro.

    7. Serve: Enjoy warm over rice or your favorite grain.
