Quinoa Bites Recipe

I have made these several times now. They are a great appetizer for a party, an easy lunch to take on a long hike and for some game-day snack food.

They’re always a hit and I never mind making them because they’re so simple to throw together.


  • 2 cups cooked quinoa
  • 2 eggs
  • 1/2 cup feta cheese
  • 2 cups fresh spinach
  • 1 clove fresh garlic, grated
  • Salt and Italian seasonings, to taste


Sautee spinach and grated garlic for about 5-7 minutes over medium heat. Set aside to cool.

Drain spinach and chop into small pieces. Set aside.

Whisk 2 eggs in a large mixing bowl then add quinoa, feta cheese, spinach and spices. Stir everything together and roll into balls (like you would cookie dough).

Place on a baking stone (or cookie sheet) and cook for 15-20 minutes at 350 degrees.  Quinoa bites should be somewhat firm to the touch on top when you take them out of the oven.

Let cool for about 5 minutes and then dip in marinara sauce.
