Gluten-Free Pasta with Veggies and Feta

When you think of gluten-free meals, pasta probably doesn’t come to mind but there are tons of gluten-free pastas out there these days.  My favorite brand is Bionaturae.  My kids can’t even tell the difference and they are usually very aware when I’m trying to switch around their favorite foods. 

Co-op West Main sells this particular brand and it’s one of the only places I can find it.  Two of my kids love pasta with red sauce and Parmesan, one likes it with butter and salt and I like something with veggies and more dynamic flavors.  Pasta is the perfect dish to personalize without feeling like you’re making different meals for everyone.

This is one of my warm weather favorites and cherry tomatoes and lemons are on sale at the Co-op now through May 3.  Perfect timing!

The ingredient list is small but the flavors are big.

Super Simple Gluten-Free Pasta

Ingredients

  • 1 package gluten-free pasta of choice
  • cherry tomatoes
  • fresh basil
  • lemon zest
  • goat cheese or feta
  • olive oil
  • salt and pepper

Directions

Cook pasta according to package, drain and set aside.

Toss as many cherry tomatoes and fresh, chopped basil as you like with the cooked pasta and about 1 teaspoon to 1 tablespoon of lemon zest, depending on how lemony you like it.

Drizzle with olive oil and crumble goat cheese or feta, salt and pepper on top.

Super simple and it tastes so fresh and summery!
