Back to School Breakfast Smoothie

You know how after about the first week of summer, parents start counting down until school starts again?
Well, that’s very real.
But then school actually starts and parents are hit in the face with the fact that they suddenly have to not only get everyone up and out the door but also make everyone’s breakfasts and lunches before 8 am.
Smoothies have long been one of my own morning staples and the kids have been hit or miss with them over the years.
But I have a new favorite that’s loaded with protein, fresh fruit and veggies, takes about two minutes to make and even my kids like it.
I don’t like a lot of protein powders but there is one I buy in the Wellness Department at Co-op West Main that I think is good called Garden of Life Raw Organic Fit. It also is available in single-serving packets (original and vanilla) so you can try it before you invest in the large container. Two out of three of my kids like it so I consider that a win.
For the one who doesn’t, I make the same smoothie and just leave out the protein powder.
- 1 scoop chocolate protein powder (optional)
- 1 cup strawberries (or a mixed berry blend)
- 1/2 cup chopped kale
- 1/2 banana
- 1 heaping tablespoon almond butter (bulk almond butter is on sale through September 19)
- 1-2 cups unsweetened almond milk (depending on desired consistency)
- 1 cup water
- 1/2 cup ice
*I LOVE cardamom and it goes really well in this smoothie. When I make it for myself I also add 1/2 teaspoon of ground cardamom.
Add the ingredients to your blender and blend on high for about 45-60 seconds.
