Stuffed Baked Radicchio

2 heads of Radicchio 8 oz goat cheese ½ C pine nuts, toasted 2 T shallots, minced 2 T chopped parsley, curly or Italian 1 T olive oil Salt and pepper to taste

Preheat oven to 350 degrees. Halve radicchio heads down the middle. Cut out hard core and remove several layers of inner leaves to hollow out a small hole for stuffing. Chop up those leaves and combine with goat cheese, pine nuts, shallots, parsley, and olive oil; salt and pepper to taste. Fill radicchio halves with stuffing. Bake until hot and golden, or about 30 minutes.
